Our Impressions on the 2011 Castoro Cellars Estate Grown Chardonnay:
This wine is rich in every sense, and has it all; tropical and citrus flavors on the palate with just a kiss of crème brulee and chai coupled with an enticing nose bringing forth aromas of vanilla, pear and apple. A short elevage in French oak allowed this wine to be-come a beautiful collage of flavors, providing the roundness and full body we have come to expect from great California Chardonnay without losing its fruit component. This wine will complement any seafood dish and really stand out with rich cream sauces on pasta or chicken. Serve it with a good chill but not extremely cold to allow these flavors and aromas to flourish.
